Zucchini Rampicante – Mon.Aug.6, 2018

Today at bridge a player brought in some zucchini to share:

It is an Italian heirloom climbing zucchini. This one that I brought home was
30 inches long and weighed 3 lbs. Guess we will be eating zucchini for a while!

    You need some good recipes. Vern’s Mom used to bake large ones and used the inside that was mixed with tomatoes and onion to stuff it and I think sprinkled some parmesan cheese on top.
    My Mom used to boil zucchini (ugh) and we all hated it, but there are many delicious ways to use it. Zucchini bread is good too.

    Vern’s Mom’s recipe sounds good for my low carb diet. I baked about 8 three inch pieces of it yesterday for a half hour at 425 and it still wasn’t finished. Guess I will try the rest for longer.
